Setup happens through Fellow’s companion app on iOS or Android. That’s where you pick a Brew Profile, schedule a pot for 6:45 a.m., or dial in the bypass ratio described below. Fellow also syncs profiles from its own Drop-roasted coffee releases, but nothing stops you from building a custom profile around a bag of your own beans and just telling the machine your ratio and bloom time directly.

Bright, low-density beans make this the harder test for any machine, since they punish uneven saturation immediately, and there was none of the flat, telescoped flavor that gives away a machine phoning in its bloom cycle.
Full-carafe mode on Big Joe Blend, valve opened toward its stronger setting, held up across all ten cups. The first mug poured tasted the same as the last one out of the carafe, exactly the point where cheaper machines fail once the bed starts channeling under a bigger dose. Where It Loses: The Honest Trade-Offs
None of this comes cheap or fuss-free. $399.95 for the thermal-carafe model is real money — close to four times what a full Kalita Wave setup costs, kettle and filters included — and a patient hand can match or beat the Aiden’s cup quality with that cheaper kit. What the Aiden actually sells is the same ceiling without ten minutes of attention every morning.
It also doesn’t grind anything. You’ll still need a decent burr grinder dialed into drip range (our Fellow Opus review covers a solid all-purpose option), because feeding this machine pre-ground supermarket coffee wastes every degree of temperature precision it’s built around. And the app dependency is a real ask: building and tweaking Brew Profiles happens on your phone, which is friction some buyers will resent on a device whose whole pitch is “stop thinking about your coffee.”
Fellow Aiden vs. Manual Pour-Over: Picking Your Corner
Manual pour-over wins on cost and on ceiling in skilled hands. Nothing here beats a dialed-in V60 for the absolute best cup a specific bag of beans can produce, and it demands a kettle, a scale, a timer, and your full attention for the entire brew, every single time.
The Aiden wins on repeatability and on mornings you don’t have that attention to give. It doesn’t get better than a great manual pour, but it also doesn’t get worse on the days you’re moving too fast to pour a slow, circular kettle stream. Most drip machines just apologize for being drip machines; the Aiden is making an actual argument instead.
Who Should Buy It
Buy the Aiden if you already care enough about extraction to have a favorite pour-over ratio, but you’re tired of the ritual eating ten minutes you don’t reliably have. It’s also a real option if you’re brewing for more than one person regularly; the bypass valve solves a problem manual pour-over just doesn’t have a good answer for.
Skip it if $399.95 is more than your whole current setup, or if the ritual of a slow manual pour is part of why you drink coffee in the first place.
